  3. 1 stalklemongrass (bruised)
  4. 1small packet of Kara coconut milk dissolved in 2 cups of water (can be replaced with coconut milk from 1/2 coconut)
  5. 1 teaspoonsugar + salt to taste
  6. Spice paste:

  8. 4 clovesgarlic
  9. 1/2 tablespooncoriander seeds
  10. 1 cmturmeric (optional)
  11. 4candlenuts
  12. Crispy topping ingredients:
  13. 1 1/4 cupschicken broth (from cooking the chicken)
  14. 2heaping tablespoons rice flour
  15. 125 gramstapioca flour
  16. 1/2 teaspoonbaking powder
  17. 1egg yolk

Cooking Instructions

    Mix the coconut milk and spice paste, lemongrass, bay leaves, salt, and sugar, and stir well.

    Add the chicken, cook over low heat until the coconut milk reduces and the spices are absorbed. Reserve the chicken broth, strain, and measure 1 1/4 cups for the crispy topping.

    Heat cooking oil, dip the chicken into the crispy batter, then fry over medium heat until cooked, remove, and drain. (No photo for this step because the baby was fussy😊)

    Make the crispy topping: Mix all ingredients except the baking powder, heat oil in a pan, while waiting for the oil to heat, add the baking powder to the batter, and mix well.

    Make sure the oil is really hot, stir the batter with your hand, take some batter with your hand, drizzle the batter using your fingers in a circular motion over the pan. Once the batter is in, it will spread on its own, once it starts to firm up, flip the batter, then fry until golden brown, remove, and drain on kitchen paper to absorb the oil, then sprinkle over the fried chicken, ready to be served with sambal and fresh vegetables.
