Ox/Beef Stew Cooked In Red Wine

Ingredients

  1. 1carrot, peeled and sliced
  2. 4small potatoes, peeled and and cut into quarters
  3. 4small onions, peeled and cut into quarters
  4. 80 ggreen beans, ends trimmed and cut in half
  5. 1/2swede, peeled and cut into small squares
  6. 4garlic cloves, peeled and sliced
  7. 1parsnip, peeled and sliced
  8. 1-2 stalkscelery, sliced
  9. 500 gbeef or ox cheek, or both, cut into chunks
  10. 4 tbsprapeseed oil or olive oil
  11. to tasteSalt
  12. to tasteGround black pepper
  13. 1beef oxo cube
  14. 400 mlred wine
  15. 1 tspdried thyme
  16. 200 mlwater, plus extra if needed
  17. 100 gpearl Barley
  18. 1 tspdried oregano
  19. 2Bay leaves

Cooking Instructions

    Heat 2 tbsp oil then in batches brown the meat. Set aside when done.

    Next add the rest of the oil and fry the onions and garlic for 5 minutes.

    Then add the celery, carrots, parsnip, swede, oregano and thyme. Dry fry for a further 5 minutes. Season with salt and pepper.

    Add the wine, water bay leaves and oxo cube. Bring to the boil over a medium heat. Scrape the bottom with the spoon.

    Once boiling add the meat and any meat juices.

  6. 6

    Add the potatoes, Barley and beans.

  7. 7

    Stew cook over a low/medium heat for 3-4 hours. I ran out or time so I cooked mine over a medium heat for 2 hours adding more water when it become a little dry. Stir occasionally.
