I love this on a snowy, winter day.

You can make this into a stew beef and tomato soup by leaving out the vegetables and adding more tomato sauce as needed. I often start it out as the tomato soup and then add the vegetables the next go round.

I got this idea from watching the create channel on something about cooking. I made my soup with a lot more than the show did. The show did a onion mushroom soup with salt and pepper. I thought it would be a good base but needed lots more. This is the result.

#GlobalApron 2024 week 38 ingredient onion. I love homemade soup. It is so much better than canned. After cooling I measure 4 cups and put in gallon zip lock bags.. I lay them flat on a sheet pan and freeze. They take little room in the freezer and thaw quickly. There really aren’t measurements for this recipe. You can make a small batch or be like me and end up with 16 quarts.

Great hot soup for cold temperature, especially when you have a cold or flu, ginger in hot soup will help keep the body warm.

I have a Chicken Ramen Noodle Pack and a can of Beef Vegetable Soup, and am in a hurry and hungry.
