Sister Dee-Dee and I became obsessed with egg roll food truck that comes to town once or twice a month. They have loads of delicious fillings, and I was impressed that they slice them lengthwise so they're easy to sauce and eat. Also didn't previously know there are extra-large egg roll wrappers than the regular size we find at the grocery store. We found extra-large SPRING ROLL wraps at the Asian market, so used those; but would have preferred egg roll wrappers. Only complaint with the egg roll food truck is their price; $50+ for the two of us!! So we decided to have a go at making our own.Since a Reuben is my #1 favorite sandwich, this was my easy choice. Dee-Dee is making a barbecue pulled pork, and we're also going to try a caramel apple dessert egg roll! (Will add those soon. ) Not giving measurements, just method; use amounts to your preference.Was very tasty, but I have to admit that the food truck's are prettier and fatter.
