I have made this many times and its great on a hot day with a bbq, you can pick and mix ingredients as they are available through the year.

Due to our extreme NM heat, it appears this is the end of my garden goods for the season. 😔Anyway, it's all about the fresh! This is a delicious, Greek inspired, refreshing, healthy salad that pairs great with just about any main dish. It's also a versatile recipe with so many other options to add. Even a colorful pasta. So have fun with it! 😊

This was something I created (to the best of my knowledge). I've been modifying it and trying different things, until I hit on this. The very slight smokyness of the kippers, the avocado, a little onion (red, sweet, green or chives all work) all work together. You can add some spice, but it can overpower this one. If your avocado is little over ripe, it's still ok.

Stone roasting is a special way to bring out sweet flavors from squashes and paprika peppers. You can stone roast in your airfryer or oven by using a simple floortile. Oil the tile, place sliced vegetables on tile, roast till fragrant. The harder the vegetable, the thinner the slices, so all come out evenly roasted. Brushed with sesame oil.#GlobalApron
