Pineapple Chicken - Filipino Recipe

Ingredients

  1. 2 lbsboneless chicken thighs, cut into cubes
  2. 1 canpineapple chunks
  3. Tomatoes, sliced
  4. Onions, sliced
  5. Minced garlic
  6. cubesGreen bell pepper, cut into
  7. Baby carrots
  8. 1/2 cupfresh milk
  9. 2 tbspsfish sauce
  10. Cooking oil

Cooking Instructions

  1. 1

    Marinate chicken with pineapple juice seperated from the chunks for 30 minutes. And drain, save pineapple juice from marinade for later use.

    Heat oil in a pot and saute minced garlic, onions and tomatoes

  3. 3

    Add drained chicken and cook until light brown.

  4. 4

    Add pineapple marinade and fresh milk and simmer for 20 minutes.

  5. 5

    Add pineapple chunks and carrots and cook until sauce lightly evaporates, do not cover

  6. 6

    Add fish sauce and bell pepper and simmer for 5 minutes.

  7. 7

    Serve and enjoy
