Ingredients

  1. For Orange Cake
  2. 2 1/2 cupscake flour
  3. 2 1/2 teaspoonsbaking powder
  4. 1/2 teaspoonsalt
  5. 10 tablespoonunsalted butter, at room temperature
  6. 2 teaspoonsfresh grated orange zest
  7. 1 1/2 cupsgranulated sugar
  8. 3large eggs
  9. 1 teaspoonvanilla extract
  10. 1/2 teaspoonpure orange extract
  11. 1 cupfresh orange juice
  12. For Orange Whipped Cream Filling and Frosting
  13. 3 cupscold heavy whipping cream
  14. 1/2 cupconfectioner's sugar
  15. 1 teaspoonvanilla
  16. 1/4 teaspoonpure orange extract
  17. 1-3 ouncebox orange gelatin (jello)
  18. 1/2 cupboiling water
  19. 1/2 cupfresh orange juice

Cooking Instructions

    Make Orange Cake

    Preheat the oven to350. Spray 3 - 8 inch cake pans well with bakers dpray

    In a bowl whisk together flour, baking powder and salt

  4. 4

    In a large bowl beat butter, sugar and orange zest until fluffy, about 3 minutes

  5. 5

    Add eggs one at a time, beating in after each egg. Beat in vanilla and orange extract

  6. 6

    Add flour mixture alternating with orange juice just until combined, don't over beat

  7. 7

    Divide batter evenly in prepared pans and bake 18 to 20 minutes until a toothpick comes out just clean. Cool 10 minutes in pan then remove to wire racks to cool completely before frosting

    Make Orange Whipped Cream Filing and Frosting

    Dissolve orange gelitin in boiling water, stirring until fully dissolved. Add cold orange juice and combine, refrigerate while whipping cream

    Whip cream tosoft peaks

    Beat in sugar, extracts, orange zest and cool but still liquid gelatin. Beat until cream holds its shape

    Assemble cake

    Place one cake layer, bottom side up on serving plate

    Add some orange whipped cream

    Add second cake layer, bottom up

    Add some more orange filling

    Add third cske layer and frost entire cake with the orange whipped cream. If the fillingvis still quite soft then you can refrigerate the cake and remaining frosting for about an hour to firm it up if frosting is difficult

    Garnish with shaved chocoolate and orange sprinkles. Refrigerate cake at least 4 hours to allow whipped cream to firm up before slicing

“Fenway” passed away on 2/3/2021. For the last year she tried to teach her husband of 42 years how to cook like her. Although I will never be as good of a cook as her she did pass on her passion for cooking. Therefore, I will attempt to carry on her legacy and maintain/update her site. My wife was a Registered Nurse, a licensed deep water aerobics instructor, a mother to our 2 children and a fantastic cook. We grew up in New England but have been fortunate to live all over the US. I am now retired, missing her terribly, but thankful for all the years we had together and all her cooking lessons.
