Creamy parsnip & butter bean soup

Now a days, we all are suffering from cold, flu and cough; And very fresh vegetables are in seasons too. 😃 So we have already decided that will have Instant Noodles soup for lunch. The good point is kids can have vegetables easily and I feel so relax and satisfied that my girl is having vegetables ☺️Can I tell you something interesting part here about this soup. This soup is so common and served on road side stalls as well as in restaurants on Malaysia. They called this soup “Maggie Soup” . They serve with boiled egg or half fry egg and put a lot of other vegetables also to make it rich, healthy and delicious.

I am a big fan of chowders, the thick and creamy soups. This winter I tried it with a little twist. I didn't blend the chicken and corn till smooth paste, infact I just ran blender in the soup which left tiny shreds of chicken, and it gave a good taste.I don't like eggs in the sup so I skipped it, if you like, you can add it in the end and cook for 5 mins.
