Minestrone soup is an Italian classic!best thing about Minestrone that it can be made with any fresh seasonal vegetables with the addition of pasta in a meat-based stock.Its an all time favourite packed with nutrition and a complete meal itself.can be used as it is or with rice or breads as well.

Cooking Instructions

Add olive oil in pot.add bayleaf, chop garlic and chop white part of spring onions and saute to pink.boil white lobia(cannelini beans) and pasta.I hv used elbow maccroni,yet any pasta shape can be used.

Prep vegetables.boil corn,take out kernels(dany).dice carrot, zucchini,cabbage,french beans, tomato.add in pot & saute well till.

Add chicken/beef/vegetable stock.give a quick boil,then cover & let it cook at medium flame for 10 minutes.

Add tomato paste & seasoning. Add boil pasta and beans.mix well.add chop green part of spring onion.let it simmer for 5-7 min to get all flavours blended together.taste & adjust seasoning as well

Dish out and topup with parmesan cheese, fresh Dill & Basil.Enjoy with bread sticks & crispy crackers.as pasta & whole vegies makes it little thicker I,try to keep it warm all the time.

Note:There is no hard & fast rule for vegetable selection in Minestrone soup.You can add potato,spinach,bellpepper,Broccoli,squash,red kidney beans or peas as well.same goes for pasta.(any shape) & stock.beef/chicken,vegetable any stock.

Veggie soups are so easy. There are hundreds to choose from and probably hundreds more yet to be invented. This is just my basic idea of a quick throw together soup. It will help you clear out any left over veggies and is a fun shopping trip to the markets to put it together. I make it because I work shifts so it is a good quick brekky and later at night an easy and tasty meal. It also is very weight concious.
