Ingredients

  1. 2Large Eggs, at room temperature
  2. 1 CupMilk, at room temperature
  3. 1 Cup+ 2 Tbsp Granulated Sugar
  4. 1 CupOil
  5. 2 CupsAll-Purpose Flour
  6. 3 TbspCocoa Powder
  7. 1 TbspBaking Powder
  8. 1 TspVanilla Essences
  9. 1/2 TspSalt
  10. 9" Round Cake Pan
  11. coconut frosting
  12. 1 cupbutter, softened
  13. Pinchfine sea salt
  14. 3 1/2 cupspowdered sugar
  15. 1 teaspoonpure vanilla extract
  16. 1/2 teaspooncoconut extract
  17. 2Tablespons coconut cream(haleb crem with 4tbsp coconut powder)

    First Preheat the oven 180C.

    In large bowl Sift the flour with baking power and salt. Add the eggs to the sugar in a wide shallow bowl. Using an electric mixer, whisk the eggs and sugar for 2 to 3 minutes or until they are pale yellow and thick enough to form a ribbon when the whisk is lifted from the bowl.

    Pour the Oil, Milk and Vanilla extract to the egg mixture. Add the flour mixture in small batches and mix only till it is combined.

    Remove 2-1/2 Cups of batter to another bowl and stir in the cocoa powder.

    Grease a 9" pan with butter/oil and dust it lightly with flour. Now using a small ladle pour about 2 tbsp of white batter into the pan and then the chocolate batter. Don't wait for it to spread. Alternate it with cocoa batter. Repeat.

    Finally its done. Move the pan carefully and position it in the middle rack.
    Bake for 50 minutes or till the toothpick comes clean when inserted in the centre. Remove the pan from the oven and let it rest till the cake pulls from the sides of the pan. Carefully move it to a plate or cooling rack and let it completely cool prior to cutting into wedges.

    Coconut frosting

    Add the butter to the bowl of a stand mixer fitted with the paddle attachment and beat until smooth.
    Add half of the powdered sugar and a pinch of sea salt and beat on low until the sugar is mostly incorporated. Add the remaining powdered sugar and beat on low until combined. Increase speed to medium and beat for 3 minutes.
    Stop the mixer and scrape down the bowl. Add the vanilla extract,

    Coconut extract, and coconut cream then beat for an additional minute on low, increasing the speed to medium once the cream and extract is incorporated.
