Cooking Instructions

Wash and cook Toor dhall by adding turmeric powder.

Boil 1/2 cup of tamarind water, salt, vegetables...for 15-20 Minutes.

Dry roast 1.5 tsp coriander seeds, 3/4 tsp chana dhall, 1/4 tsp pepper, 1/4 tsp Methi, 1 tsp fried chana, 4 dry red chillies, 1/4 cup grated fresh coconut, curry leaves.

Make a fine powder with above-mentioned ingredients.

Once the raw smell of tamarind goes...Add freshly grounded masala, cooked / well mashed Toor dhall. Add 1/2 cup of water.

Boil for 10 Minutes and switch off the flame.

Add asafoetida.

Seasoning should be done by heating oil Add mustard seeds....wait till is crackel well Add to the Sambar. Add chopped coriander leaves and serve.

It is spicy because of a lot of chilies, savourish because of asam jawa ( tamarind) and sweetness comes from coconut milk.We used to have this Malaysian curry ( lemak Ayam - coconut curry with Chicken) in lunch. Behind our office there is a small restaurant who serves malay food. We need to be there before 1 otherwise, the curries, fish and chicken all get finished. I was missing that food and was thinking to make it here. I called my sister in law, get the recipe and made it. Such a beautiful memories of mine attached with this.Malay people used to make it in chicken, prawns and fish. Or some time without it. I also made it without any meat because I made Sambhal fish with it.
