Ingredients

  1. chicken
  2. 8chicken breasts, skin off
  3. 1dash soy sauce
  4. 8thin slices of lemon
  5. 1freshly ground black pepper
  6. cherry sauce
  7. 2 tbspapple cider vinegar
  8. 4 tbspbrown sugar
  9. 2 tbspcornflour/cornstarch
  10. 425 gramscan BLACK pitted cherries, drained, juice reserved. I use John West cherries
  11. 1 cupchicken stock
  12. 1 tbspeach, grated orange and lemon rind
  13. 1/2 cuporange juice
  14. 2 tbsplemon juice

Cooking Instructions

    Preheat oven to 180°C. Brush the breasts with soy sauce. Place a lemon slice on each breast and season with pepper. Place chicken in oven dish and bake until well done, approximately 1 hour or you can grill it.

    Place vinegar and sugar in a saucepan, bring gently to the boil, and cook stirring constantly until caramelized. It will look brownish

    In a small jug or bowl, blend cornflour with 2 tbs of cherry juice and place remainder of juice with the stock, rinds, juices, cherries and liquid. Cook stirring for a further 3 minutes.

    Add cornflour paste, stirring thoroughly until combined. Stir until sauce thickens. Plate up the chicken with veggies or salad and pour sour cherry sauce liberally over each breast
