Ingredients

  1. 2 largeboneless chicken breasts
  2. 1 largeonion chopped
  3. 1 canlight coconut milk (like Goya brand)
  4. 2 tbspred chili paste (or more to taste)
  5. 3 tbspSmart Balance oil or good olive oil
  6. 1 eachred, yelliow & green peppers sliced

Cooking Instructions

    1) Heat oil in large pan.

  2. 2

    2) wash chicken breasts and pat dry. lightly salt & pepper with coarse s&p

  3. 3

    3) brown chicken on both sides and remove to plate.

  4. 4

    4) Add the sliced peppers and chopped onions into same pan and stir fry until translucent.

  5. 5

    5) Meanwhile, cut up the browned chicken breasts into bite-sized pieces.

  6. 6

    6) in a saucepan, pour the can of light coconut milk into pan wit 2-3 Tablespoons of red chili paste or more to taste. heat on low. Stir well.

  7. 7

    7) Add bite sized chicken bites to pepper and onion mixture. Pour the light coconut mixture over the chicken. Mix well.Turn to low and cover for about 10-15 min so all the flavors mix well together.

  8. 8

    8) serve with brown or white or Jasmine rice on the side.
