Ingredients

  1. 3cucumbers
  2. 2large onions
  3. 1 1/2ozs salt
  4. 1 pintwhite wine (or cider) vinegar
  5. 12ozs sugar
  6. Halfa teaspoon of turmeric
  7. 1 pinchground cloves
  8. 1 tbspmustard seeds

Cooking Instructions

    Cut the cucumbers and onions into thin slices and put in a colander, sprinkling salt between the layers.

    Put a plate on top and a heavy weight. Leave for several hours, then pour off as much of the liquid as possible.

    Put the vinegar, spices and the sugar into a pan. Stir over a gentle heat to dissolve the sugar. Add the drained cucumber and onions, bring to the boil and cook for 1 minute only. Remove pan from heat and spoon the cucumber and onion into sterilised jars, using a slotted spoon. Boil the vinegar for a further 15 minutes (uncovered) and pour it over the cucumber. Seal the jars.

Looks as if it will be superb! One query though. Is the 1.5oz salt what is used for the initial sprinkling, or does 1.5oz salt go in the pan with the vinegar? I did the latter.......
