Everytime my sister visits, cookies are a must. It's an unwritten rule. This Christmas she is visiting and I have an endless list of cookies to make. Since I had a gallon of peanut butter taking up fridge space I thought I'd make peanut cookies as a #ChristmasGift so she gets to eat the cookies and have a recipe to make them by herself until she's stuffed 😎

Peanut butter cookies

Ingredients

1 hr 30 min
Yields 38 - 40 cookies
  1. 3 cupsflour
  2. 2large eggs
  3. 1 1/2 cupcrunchy peanut
  4. 2/3 cupbrown sugar
  5. 1 cupbutter
  6. 1 tspvanilla
  7. 1 tspbaking powder
  8. 1 1/2 tspsoda bicarbonate
  9. 1/2 tspsalt

Cooking Instructions

    Cream butter, peanut butter and sugar until fully incorporated

  2. 2

    Lightly beat the eggs separately then beat them into the creamed mixture, a little at a time. Add in the vanilla and stir

    Sift dry ingredients together and stir them into the creamed mixture. Your dough should not be runny otherwise it spreads too much in the oven and burns quickly

    Refrigerate cookie dough for an hour, covered in cling firm. Fridge time helps with the shaping of the cookies in the next step

    Preheat oven to 180°C and line a cookie sheet with baking paper

  6. 6

    Roll teaspoon fulls of dough between your palms into balls, and place them on cookie sheets. Flatten each ball by making a crisscross pattern with the back of a fork

    Bake cookies for 10minutes or until they start to brown

  8. 8

    Enjoy with a glass of warm milk!
