Another swift soupmaker recipe, using leftover cooked cabbage and old vegetables before today’s fresh delivery so it’s virtually nil cost. #WastenotWantnot

Ingredients

27-30 minutes including prep
4-6 servings
  1. 150 gSavoy cabbage, cooked and roughly shredded
  2. 1onion, roughly chopped
  3. 1potato, peeled and diced
  4. 1carrot, peeled and diced
  5. 2 clovesgarlic, chopped
  6. 1 litrevegetable or chicken stock (I used homemade chicken stock coz I had it in the freezer but a stock cube is fine)
  7. 1 tbsptomato purée
  8. 1/2 tspdried oregano
  9. 1/2 tspdried thyme
  10. Salt for seasoning, if needed
  11. Ground black pepper for seasoning, if needed
  12. Fresh coriander, chopped (to garnish)

Cooking Instructions

27-30 minutes including prep
  1. 1

    Put all ingredients except seasoning in soupmaker and push start button.

  2. 2

    Come back when cycle ended, normally 20-22 minutes. Season to taste. Depending on the stock you use, salt might well not be needed.

  3. 3

    Add the coriander garnish and serve piping hot with bread of your choice.
