Chicken Vegetable Soup using whole chicken

My wife always made great soups, but her only published chicken soup is from a leftover carcass. This recipe is for making chicken vegetable soup from a raw whole chicken. As with all soups the great thing is you can substitute different vegetables and when making your stock you can add what ever you find in your pantry or refrigerator.

Ingredients

  1. for making chicken stock stock
  2. 1whole chicken (4-5 lbs)
  3. Sriracha seasoning
  4. 12pepperoni slices
  5. 3carrots, cut in large pieces
  6. 3celery stalks, cut in large pieces
  7. 1large onion quartered
  8. 1jalapeño quartered
  9. 3-4garlic cloves halved
  10. 1 tspPoultry seasoning
  11. 1 Tbsppeppercorns
  12. 1 tspdried thyme
  13. 8-12 cupsChicken broth (need enough to cover all the pot contents
  14. for making the soup
  15. 2carrots peeled and diced
  16. 2celery stalks diced
  17. 1onion diced
  18. 8mushrooms diced
  19. 2red chili peppers diced (for some color and heat)
  20. 3garlic cloves minced
  21. I had some frozen poblano peppers and frozen artichokes that I threw in
  22. 1 Tbspolive oil
  23. 1 Tbspbutter
  24. 1 tspblack pepper
  25. 1 tspsalt
  26. 1 TbspLemon juice
  27. 1 TbspFranks Hot Sauce
  28. 1/2 tspDried thyme
  29. 1 candiced tomatoes (28 oz) (optional)
  30. Grated Parmesan cheese for garnish

Cooking Instructions

    MAKE STOCK: Cut cut up chicken into pieces. Season chicken pieces with sriracha seasoning. Crisp up pepperoni slices in a deep pot. Turn once and when crisp remove to a plate with a paper towel. You are going to use the pepperoni later. Add 1 Tbsp seasoned olive oil to the pot and brown the chicken pieces.

    Add vegetables, garlic, peppercorns, thyme, and poultry seasoning. Add chicken stock to cover pot contents. Bring to a boil and then lower to a simmer, partially covered.

    After 30 minutes remove the chicken pieces from the pot and remove the meat from the bones. Return the bones and skin to the pot and continue simmering for 90 minutes. Cut chicken meat into small cubes and set aside. Strain the pot, collecting the chicken broth in another deep pot. Place pot in the refrigerator and allow the fat to congeal on top. I find it easiest to keep in in the refrigerator over night. Once congealed remove the fat layer using a slotted spoon.

    MAKE SOUP: In a large pan add olive oil and butter. Add vegetables, black pepper, salt and sauté until vegetables are just softened. Add garlic and stir for 1 minute. Add diced tomatoes, hot sauce, lemon juice, and thyme and simmer for 2 minutes.

    Heat the broth. Crush up the pepperoni slices and add to broth. Add in the vegetables and chicken. Taste and add salt and pepper if needed. To serve ladle soup into a bowl and sprinkle grated parmesan cheese or parsley on top. Enjoy.

“Fenway” passed away on 2/3/2021. For the last year she tried to teach her husband of 42 years how to cook like her. Although I will never be as good of a cook as her she did pass on her passion for cooking. Therefore, I will attempt to carry on her legacy and maintain/update her site. My wife was a Registered Nurse, a licensed deep water aerobics instructor, a mother to our 2 children and a fantastic cook. We grew up in New England but have been fortunate to live all over the US.
