I had cabbage and leeks leftover and some fresh coriander that needed using .

Ingredients

4 servings
  1. 4 mediumleeks , chopped and washed thoroughly
  2. 1/2 smallsavoy cabbage , shredded and washed
  3. 2vegetable stockcubes or to taste
  4. 2 tbspchopped fresh coriander
  5. 1 pincheach salt ,cayenne pepper, dried tarragon and parsley
  6. 2 tbspfresh cream(optional)
  7. 1 pinchof chilli powder for each serving to garnish
  8. 1 tbspchives for garnish

Cooking Instructions

  1. 1

    After chopping ,shredding and cleaning the leeks and cabbage put together with the coriander into a pot .Add 4 cups of water and bring to boil.

    When cabbage and leeks are soft blend into a smooth soup .

    Add all other ingredients except the chilli and chives

  4. 4

    Adjust seasoning to taste and add more water if needed

  5. 5

    Garnish witha light sprinkle of chilli powder and the chives.
