Spinatknödel with Parmesan (Spinach Dumpling)

In Europe there are so many different version of dumplings. I tried the German version when I was there on holiday a few years ago. They are massive and are made with different ingredients.
I recently saw Spinatknödel with parmesan on TV when some TV presenters did a journey to Austria. They reminded me of the German dumpling I had.
The dumplings look so appealing and I am also a huge fan of spinach. As well as sprinkling the dumplings at the end with fresh chives and a generous grating of Parmesan cheese.
I wanted to learn how to make this dish as it reminds me of eating traditional food in Europe.
I hope you enjoy making and eating this dish as much as we do.

Cooking Instructions
- 1
To make the dough, in a pan add the butter and onions on the medium heat sauté until golden brown. Then add the garlic and cook for for 2 minutes. Once cooked turn off heat and set aside.
- 2
Then either cut the bread rolls into cubes or place in a food processor and quickly break it up and transfer into large mixing bowl. In a saucepan or in the microwave heat up the milk until warm, pour over the bread rolls and season the mixture with salt and nutmeg. Add the eggs and let it soak in for a few minutes.
- 3
Now using your hands gently mix the mixture together. Make a dough with your hands until the ingredients are fully combined together, cover bowl with a clean tea towel and set aside for about 15 minutes.
- 4
Add the spinach to the mixture. As well as the butter, onion and garlic mixture to the dough. Mix all of the ingredients together and knead well. Allow the dough to rest for between 20-30 minutes.
- 5
After the time check to see if the dough consistency is right. Try to form the mixture into balls. Tip: if they hold together, its ready to use. However if the dough is too soft and doesn’t hold together, add some more breadcrumbs. Or if the dough is too dry, add more milk or eggs.
- 6
Using your hands, wet them first and then begin forming the dumpling mixture into balls (the size of tennis balls). Transfer onto a plate and repeat until all of the mixture has been used.
- 7
To cook the dumplings, in a large pot or saucepan over high heat, add water and once boiling add salt (you want the water to be salty). Once boiling reduce the heat. You want to simmer the dumplings and not boil them. Let the dumplings simmer, leaving them uncovered for about 15-20 minutes. Ensure you keep an eye on it and ensure the water doesn't boil.
- 8
In the meantime, to make the brown butter on medium heat, heat the butter in a pan until lightly brown whisking frequently. Once melted it will begin to foam up a bit and then fades. Keep watching carefully as lightly browned specks begin to form at the bottom of the pan. The butter should have a nutty aroma.
- 9
To serve drizzle dumplings with melted brown butter on top, sprinkle with grated Parmesan and chives.

Chicken and Dumplings the way it was Chicken and Dumplings the way it was
When growing up my Mom would make some chicken, and Dumplings, it only would have 1 gizzard in it. So I wanted to make sure there was enough gizzards to go around. Usually I got the gizzard, when my mom served her chicken and Dumplings. My dad and brothers knew how much I loved boiled gizzards. The gizzards chopped up in this version, gives a nice textured chew, not too chewy, as they are tender by boiling. skunkmonkey101 -
[Farmhouse Recipe] Gyoza Dumplings with Wings [Farmhouse Recipe] Gyoza Dumplings with Wings
I had a lot of cabbage, so I used a lot of it to fill these gyoza dumplings. The cabbage is salted, which prevents the dumplings from getting soggy. To make the '"wings," use 100 ml of water to every teaspoon of flour. Add enough flour-water so that 1 cm of the gyoza dumplings are immersed in it.When the dumplings are done, invert a plate over the frying pan and flip the whole thing over to transfer cleanly. Shumai Dumplings and Okowa Rice in One Rice Cooker Shumai Dumplings and Okowa Rice in One Rice Cooker
I was thinking that it's a bother to haul out the steamer to steam shumai dumplings, so I thought of cooking in the rice cooker instead. I also thought that sweet rice shumai dumplings can't be the main carbohydrate on their own... so I tried making the rice for the meal with the dumplings, and it succeeded. We use this "two birds with one stone" recipe all the time now.You can use Chinese cabbage, regular cabbage or komatsuna greens, but Chinese cabbage is very watery so you may need to adjust the amount of water added to the cooker. Regular rice may not work, since the lettuce and shumai dumplings will become immersed in water. (I haven't tried it out though.)Try different variations of the rice and shumai dumplings and adjust the amounts of your ingredients to taste. For 2 rice cooker cups' worth of rice and 7 shumai (siumai) dumplings. Recipe by Masapandayan cookpad.japan -

Yukimi Daifuku (Mochi Dumplings Filled with Ice Cream) Yukimi Daifuku (Mochi Dumplings Filled with Ice Cream)
I live overseas, and my favorite Yukimi daifuku costs 3 times what they cost in Japan, so I really wanted to make them myself, and I was able to do so.In steps 6 and 7, the dough is very hot, but it cools down quickly. The dough is very easy to handle, so work patiently, trying not to rip it. When freezing the dough, try to wrap it up as air-tight as possible. 100 g of castor sugar may seem like a lot, but this prevents the dough from becoming hard, plus it makes working with the dough in steps 6 and 7 easy. If you are making it with the "Best Gyuuhi -," which reduces the sugar to 80 g, wait until the dough has softened at room temperature first before eating. For 6 to 8 dumplings. Easy Weeknight Chicken & Drop Dumplings Easy Weeknight Chicken & Drop Dumplings
This is a quick and easy, but delicious, chicken and dumplings dish that I enjoy whipping up when I don't have time to make a "long version". This still looks like a lot of ingredients, but I promise it comes together in under 45 minutes. The dumplings are fluffy and biscuit like instead of dense and chewy because I don't like the texture of dense dumplings. Semmelknödel (German Bread Dumplings) Semmelknödel (German Bread Dumplings)
Germany has all kinds of "knödel" or dumplings - Semmelknödel, which are made with dried out bread, are one of my favorites. Variations exist in Austria and Czech as well. It's one way to "recycle" old bread so it needn't be tossed away. These dumplings are usually eaten along side sauerkraut & pork, roast meats with the gravy, stews or some kind of sauce. In the photo, I used a creamy mushroom sauce, which works very well! This recipe makes 6 medium dumplings, appropriate for 2-3 people.Note on the bread: you should use a good bread that has some firmness like baguettes, kaiser rolls or German brötchen. Soft white sandwich bread or breadcrumbs will fall apart when cooking! Felice -

Easy Homemade! Gyoza Dumpling Skins Easy Homemade! Gyoza Dumpling Skins
I ran out of skins when I was making gyoza dumplings, so I tried making the skins in a hurry - and I was so surprised that they weren't that different from the store-bought kind! The consistency of the dough can vary depending on the room temperature, season, and type of flour used, so adjust the amount of hot water added. The dough should have a slightly firmer consistency than your earlobe. If you let the dough rest for some time it will be easier to roll out. When rolling out the dough, flour your hands and the rolling pin generously.Make boiled gyoza skins thick, and panfried gyoza skins thin and rectangular.
