Lazy stir fry
When you have just about 15 minutes to cook lunch for the next day this will just about hit the spot.
Cooking Instructions
- 1
Chop the cabbage, mushrooms and leeks and add them to a big pot on high heat with a generous amount of soy sauce. You can use a wok if you want to be fancy.
- 2
The mushrooms will release all of their liquid after a few minutes and keep cooking on high heat till most of the liquid is gone.
- 3
Take out the pre-cooked noodles making sure you don’t cut yourself opening the package as you panic because your vegetables are burning in case you forgot about them like I did. Add them the pan.
- 4
At this point you realize you can just take it of the heat and blend everything together adding the curry powder and the rest of the spices I have listed above.
- 5
Finally carefully plate the food and top it off with some hot sauce before you take a picture and then put it in a plastic container making sure not to forget it in the morning on the way to work.

Add color to your food: Pickled Onion 🌈 Add color to your food: Pickled Onion 🌈
For the last 3 months, I've been obsessed with pickled onions. I thought it was difficult and time consuming to make. But, it's not. I'm not pickling onions in a big jar, rather prepare it to consume it in the next day. I have this tiny plastic storage cup that I use for pickling onions. Enjoy this as a topping to your favorite tacos or salads. You can keep this in the fridge up to 2 days (based on my research). mozgl -

Beer Can Roasted Chicken Beer Can Roasted Chicken
My hubby usually brings back few cans of beer from his office during chinese new year but we don't usually drink beer. So the beers are just sitting there in my kitchen cabinet. One day, someone posted in facebook that he roasted the chicken with beer. So I decided to try it out and wow... We LOVE it. The meat is super tender, juicy, the skin is crispy and the seasoning is just perfect. The roasted veggies are also very yummy. My youngest son even finished all the purple sweet potatoes (He dont usually like purple sweet potatoes). The kids love it, hubby loves it. This recipe will be used over and over again! In this recipe, I used tiger white beer (the one I had at home). Next time will probably use other type of beer. Not very sure whether the different type of beer will give different flavour to the roasted chicken, some people says it doesnt really matter. But will give it a try next time. Dump & Simmer Thai Style Coconut Chicken & Veg Curry Dump & Simmer Thai Style Coconut Chicken & Veg Curry
I created this recipe on a lazy fridge cleanout day when most of the ingredients I had left just made sense for a Thai-inspired curry. On the day I took this particular pic, I had Chinese eggplant, red bell pepper, and zucchini on hand, but you can use 2 to 3 cups of whatever chopped veg you like. You might have to adjust the salt a little if the veg you use has high water content. The recipe says it takes 75 minutes total, but it's really only about 15 minutes active time, so you could get it on the stove in about 15 minutes on a weeknight after work and mostly have your hands free to take care of other stuff for the hour while it's cooking before dinner.White rice usually takes about 25 minutes or so (brown rice a bit longer), so you'll want to make sure to get it started once your curry's simmering. x
