Cooking Instructions

Put one can basil diced/petite tomatoes in skillet.
- 2
Reduce liquid for a few minutes.
- 3
Make small holes for eggs
- 4
Crack two eggs in holes.
- 5
Put small amount of Parmesan cheese on outside, white part of eggs.
- 6
Place lid on skillet, lower heat to medium. Let cook for 5 minutes or until whites are solid.

This is a fun way to serve fried eggs and toast. Kids LOVE it, especially when you get creative and use cookie cutters with shapes. With Halloween right around the corner, I've made mine for sharing today using my bat and ghost cookie cutters.This is one of those recipes that I don't include any specific quantities for the ingredients. You'll want to make 1-2 baskets per person, and just need one egg for every one piece of bread and enough butter for coating your pan before adding each new bread slice. It's best to cook these one at a time unless you have a very wide skillet or griddle, which I do not. Lol.The only thing you always have to be sure of is that your crusts stay intact. As long as you stay in the crusts you can cut any shape you want into your bread. StephieCanCook -

Some days are Sunday's and you just want to take your time on making you first meal for the day. This recipe gives the ordinary eggs and toast a whole new twist. It's indulgent yet very healthy. This was inspired by my love of all things that have tomatoes. I grew up eating tomatoes I'm practically obsessed with it. I could never resist eating them either raw or cooked. Why wait for snack time or lunch to have a good serving of salsa when you can have it for breakfast. I just love the mixture of the rich taste of the eggs against the tangy and fresh taste of the salsa. The addition of paprika gives the salsa a depth of flavour with its smoky slightly hot taste. Deviled eggs are great. They're easy to make, easy to eat, and totally delicious; the perfect snacks or hors d'oeuvres. Many years ago, I tried making my own curried deviled eggs (my favourite style), and it was an unqualified disaster. Not even my wife could find anything good to say, and we were still in our blissful newlywed stage at the time, and not nearly as bluntly critical as we are now. I've hesitated to try again since that embarrassment, but finally gave it another shot. This new batch turned out great. Creamy, with just a hint of tang and a noticeable but not in-your-face level of spice. I consider these curried eggs redeemed. Robert Gonzal
