Ingredients

  1. 2 bagsGreen Giant Cauliflower Rice
  2. 2 cupsFat Free Cheddar Cheese
  3. 1England’s Best Egg
  4. 1White onion
  5. 1 cangreen enchilada sauce
  6. 1 canBlack beans
  7. 1taco seasoning packet
  8. Optional: 4 oz filet

Cooking Instructions

    Preheat oven to 425°. In a large microwave-safe bowl, microwave cauliflower. Set aside until cool enough to handle, then use a clean kitchen towel to squeeze and ring out out excess moisture.

    Add 1 cup shredded cheddar cheese and egg to Cauliflower. Season with salt and mix until combined. Grease an ovenproof 10” skillet lightly, then press the cauliflower mixture into skillet. Bake until golden and dried out, about 20 minutes.

    Add 1 tbsp butter, sauté onion and cook until softened, about 5 minutes. Add taco seasoning packet, enchilada sauce, black beans and bring mixture to a simmer. Turn off heat.

    Spread enchilada sauce mixture over baked cauliflower crust then top with remaining cheddar cheese. Bake until the cheese has melted and the crust is crispy, about 15 minutes more.

    Optional Add-ons. Top with sliced 4 oz filet or egg.

Looks delicious! But the words “tamale” and “pie” don’t apply here 😂 health food needs to be more original with its naming process. My wife wants more cauliflower in our diet though so I’ll try this “southwestern cauliflower bowl” ;)
