Ingredients

  1. For rolls
  2. 3/4 cupbesan
  3. 1/4 cupcorn flour
  4. 1/4 cupcurd
  5. 1/2 tbspsugar
  6. 1/4 tspturmeric powder
  7. 1/2 tspchilli flakes
  8. As per tasteSalt
  9. 1/4 tspbaking soda
  10. 1 tspnigella seeds
  11. 1 tspsesame seeds
  12. For filling
  13. 150 gram mutton mince
  14. 2 tbspchana dal
  15. 1/2 inchcinnamon stick
  16. 1bay leaf
  17. 1/2 tspcumin seeds
  18. 2red whole chilli
  19. 5-6garlic clove nicely chopped
  20. 1/4 inchginger nicely chopped
  21. 1/4 tspsyah jeera
  22. 3-5black pepper
  23. 2-3white pepper
  24. 1black cardamom
  25. As per tasteSalt
  26. For tempting
  27. 2 tbsp vegetable oil
  28. 1 tspcumin seeds
  29. 1onion julien
  30. 1/2 cupcapsicum julien
  31. 1/2 cupcabbage shredded
  32. 2green chilli chopped
  33. 1 tbsplemon juice
  34. 1/2 tspgaram masala powder
  35. As requiredGreen chutney for spreading
  36. As requiredMayonnaise for spreading
  37. As requiredFresh chopped corriender

Steps

  1. 1

    Take mutton mince, chana dal and all filling ingredients, add some water and left to cook

  2. 2

    When it's cook, discard the whole masala and coarsely mashed it with masher and keep aside

  3. 3

    Now heat some oil in a pan add cumin seeds and julien onion, when onion translucent add green chilli, cabbage and capsicum and stir

  4. 4

    Now add mashed mutton masala and stir for 1 minute,

  5. 5

    Now add garam masala and lemon juice and chopped coriander and mix well and keep aside

  6. 6

    For roll, take curd, besan and corn flour in a bowl and mix well, no lumps remaining

  7. 7

    Now add salt, baking soda, chilli flakes, turmeric powder, sugar and mix well and keep aside for 10 mins

  8. 8

    After 10 mins, Now grease some oil on pan sprinkle some sesame and nigella seeds and pour the better and turn round and round to spread the better evenly, left it to cook one side only

  9. 9

    When done flip it and cook other side, when done again flip carefully spread green chutney, mayonnaise and fill the mixture and roll it and left to crisp on pan, when done left out

    Make other roll like this with remaining better and filled with mixture with green chutney and mayonnaise

  11. 11

    Now Besan Rolls with Shami Kabab Stuffing is ready to serve, serve hot for more taste
