Chicken with Peppers and Potatoes

Vacation is over, but we're still excited to cook and share new recipes with you.
Even though this isn’t exactly a summer dish, we decided to share this very simple and tasty recipe: chicken with peppers and potatoes. With just a few basic ingredients, you can make a main course everyone will love. It’s quick to prepare, and the harmonious flavors will win over your guests!
As always, we’ve added some spices—this time wild garlic, wild thyme, and a bit of hot smoked paprika—to give the dish a fresh note from the thyme and a little heat from the paprika.
Chicken, with its mild flavor, is enhanced by the taste of the peppers and the deliciousness of the potatoes. The vegetables stay tender and soak up all the flavors from the spices!

First, prepare all the vegetables. Wash and clean the bell peppers, then cut them into strips. Peel the potatoes and cut them into large wedges. Roughly chop the onions. In a large pot, add a couple of tablespoons of extra-virgin olive oil and heat well. Add all the chicken pieces, season with thyme and wild garlic to taste, and brown on all sides until evenly golden. Deglaze with the white wine and let it evaporate completely.

Once the wine has evaporated, add hot smoked paprika to taste and a little salt. Add the onions and cook for a few minutes until they start to soften. When the onions begin to soften, add the bell peppers, adjust the salt, cover, and cook for about 20 minutes until the peppers start to soften.

When the peppers have started to soften, add the potatoes. Season again to taste (be careful with the hot smoked paprika) and continue cooking for about 25 minutes, stirring gently from time to time so all the flavors blend together. Add a little water if needed.

Check for doneness, uncover, and let any excess liquid evaporate until you have a fairly thick sauce. Serve, making sure to spoon plenty of the flavorful sauce over each plate—it's perfect for dipping bread!
