Wash the apples well and scoop out a bit of the pulp from the top. Place them in a baking dish and fill the cavities with orange juice, brandy, cinnamon, and sugar.

Bake in a preheated oven at 350°F (180°C) for about 50 minutes, then remove them.

Fill with crema catalana, sprinkle sugar on top, and caramelize with a kitchen torch or broiler. Serve with the juices released during baking. Serve hot.
