These peppers come from Sicily, a place very dear to me as it is where my father was born. He grew up in Custonaci, a small town in the province of Trapani, known for its beautiful scenery, rich culture, and amazing food—definitely worth discovering.

These peppers come from Sicily, a place very dear to me as it is where my father was born. He grew up in Custonaci, a small town in the province of Trapani, known for its beautiful scenery, rich culture, and amazing food—definitely worth discovering.

Wash and clean the peppers by removing the tops and seeds. Keep the peppers whole. Clean and slice the onion and parsley.

Sauté the onion in a skillet with a splash of olive oil and a little water until softened. Add the ground sausage and cook. Deglaze with white wine of your choice.

Place the peppers upright in a casserole dish with a drizzle of olive oil. Fill them with the sausage mixture. Top with slices of melty cheese. Add a bit of water and cover with a lid. Cook over low heat for 30 to 40 minutes, occasionally checking to make sure the liquid doesn't evaporate too much. Serve warm or at room temperature.
