Prepare the ingredients: shred the green papaya, cut the long beans, and slice the tomatoes.

Coarsely pound the chili peppers and garlic. Season with prepared fermented fish sauce (pla ra), fish sauce, lime juice, sugar, and tamarind juice. Adjust the flavors to your liking—sour, salty, or sweet. Add the tomatoes, long beans, dried shrimp, and roasted peanuts, and mix well.

Add the shredded papaya to the dressing and gently pound and mix everything together. Serve on a plate.
