Ingredients

  • 300 gbaby plum tomatoes (halved)
  • 80 mlsingle cream
  • 1 tablespoondried rosemary
  • to tasteSalt and pepper
  • Tablespoonolive oil
  • Optional
  • Handfulblack or green olives
  • Sprinkle of chilli flakes
  • 1minced clove of garlic (added to the oil)
  • Additional vegetables (peppers, onion etc)
  • Additional or substitute fresh or dried herbs
  • Cheese of choice grated over the top

Steps

  1. 1

    Head a tablespoon of olive oil in a non stick frying pan. (If adding optional extras such as minced garlic and additional vegetables, add them now and soften)

  2. 2

    Add the halved baby plum tomatoes to the pan on a low-medium heat and stir until they begin to release their juices.

  3. 3

    Add the rosemary and cream (until desired sauce consistency is reached) and add salt and pepper to taste. (Optional chilli flakes if desired).

  4. 4

    Heat slowly for a further 2-3 minutes (I prefer this if the tomatoes still retain their form) and then mix with pasta, spoon over chicken/cod or use as a side dish. The posibilities are endless.
