Accompaniment to rice, mukimo and any carbohydrate
Steps

Wash and prepare all vegetables

Soft boil eggs and peel. Set aside.

In a pan add oil and onion fry to golden brown. Add ginger and garlic paste. Stir. Add the spices stir cook for 10sec. Add tomatoes and zucchini. Stir cover to cook tomatoes to a paste. Add eggs. Season. Add coriander. Serve.
