Clean the mushrooms and slice them thinly. Heat a pot over low heat, add olive oil and butter, then add the onions and sauté until cooked and fragrant.

Add the mushrooms and sauté until they wilt and release water. Add the all-purpose flour and sauté for a moment, then blend the mixture for about half a minute. (If you like the texture of the mushrooms, you can skip the blending step.)

Return the mushroom soup to the pot, add the broth and cream, salt, pepper, chopped parsley, and thyme. Let it boil for about 2 minutes, stirring occasionally.

Check if the soup is thick enough as shown in the picture. Serve warm with bread.

Half & Half is a mixture of equal parts cream and milk. Use whatever you can find. If using cream or Half & Half, you might not need a full cup. Adjust the thickness to your liking! Enjoy making and eating this creamy mushroom soup. This recipe serves 3-4 people.
