Steps

Add vinegar to the milk and set aside for 10 mins. The milk will turn to buttermilk like this.

Grease a cake tin with butter. Coat it with flour. Add a parchment paper to the bottom of the tin.

Grind the prunes with some water and filter it to make a fine paste.

Sieve atta, maida, baking powder, cinnamon, ginger and nutmeg powder.

Add oil to the flour, and whisk together. Add the plums paste, powdered sugar, buttermilk and whisk everything so that there are no lumps. Do not over-mix.

Add the vanilla and mix with cut and fold method so that no flour is stuck to the bottom of the mixing bowl.

Transfer the batter to the cake tin. Tap it on a hard surface a few times to remove air bubbles.

Bake it in a preheated oven for 40 mins at 180 deg C. A toothpick inserted into the cake should come out clean.

Run a knife along the edges, remove the cake from the tin and let it cool completely. Cut loafs a serve with coffee or tea.
