  2. 2/3 cupbrown sugar (about 120 grams)
  3. 1/2 cupbanana (about 110 grams)
  4. 1/4 teaspoonsalt (omit if butter is salted)
  5. Zest of 1 lemon
  6. 1 1/4 cupscake flour (about 150 grams)
  7. 2 teaspoonsbaking powder (about 10 grams)
  8. 1 1/2 cupsgrated carrots (about 150 grams)
  9. 1/2 cupchopped nuts (about 50 grams)

    Prepare the baking pan by spreading a thin layer of butter, then evenly sprinkle with flour and tap out the excess. Preheat the oven to 350°F (180°C). Wash, peel, and finely grate the carrots. Mash the banana with a fork. Sift the flour twice. Chop the nuts with a knife. Measure the other ingredients and set aside. Pour the melted butter into a bowl, add the brown sugar, and mix with a whisk. Then add the mashed banana and mix well.

    Add the flour in three batches, gently stirring until the flour is no longer visible before adding the next batch. Do not overmix. Add the baking powder with the last batch of flour and stir.

    Add the lemon zest, grated carrots, and chopped nuts. Use a rubber spatula to gently fold everything together. Pour the batter into the prepared pan and bake for 40-50 minutes. Let cool before removing from the pan.
