Heat the olive oil (2 tablespoons) in a skillet. Add the garlic cloves and fry until they are golden brown.

Once the garlic is well fried, remove it and set aside on a plate. In the same skillet with the garlic-infused oil, add the chickpea flour (4 tablespoons, one per person). Fry the flour well, adding the salt. You'll know it's ready when it turns a darker color. Cook over low heat to avoid burning the flour.

When the flour is well fried, add the garlic and paprika.

Add the water gradually (about 3/4 cup or 200 milliliters per tablespoon of flour), stirring constantly. When the mixture starts to thicken, stop stirring, taste for salt, and adjust as needed. Let it cook for about 3 minutes so the oil rises to the top, then serve.
