Phirni is the sweet dish from North India. It has a smooth creamy texture. Rose essence is must in phirni. And it has to be served in mud kuhlad. Phirni can be made with different flavours too like rose (gulkand) phirni, walnut phirni, pista-almond phirni, strawberry phirni, etc.

Phirni is the sweet dish from North India. It has a smooth creamy texture. Rose essence is must in phirni. And it has to be served in mud kuhlad. Phirni can be made with different flavours too like rose (gulkand) phirni, walnut phirni, pista-almond phirni, strawberry phirni, etc.
Steps

Wash rice and soak it for and hr. After an hour strain, all the water by strainer keep aside for 15 mins. So all water get strain and rice gets a little dry.

Now take thick bottom pan add milk put it on medium flame. Take small bowl mix Kesar and cold milk keep aside.

Now take grinder add little dry rice grind coarsely.

Once the milk starts getting boiling. Take spatula and start stirring. Let milk get 20%boiled.

Now add coarsely grind rice to it. Stir it well and keep stirring every 2-3 mins. Don't let stick rice at the bottom so keep stirring.

Boil the milk till the rice gets cooked and the texture gets thicker. Once u get the texture add sugar, cardamom powder and Kesar milk.

Mix it well and keep stirring so the sugar gets dissolved. Once the sugar dissolve close the flame.

Now add rose essence. Chopped Almonds. Mix it well. Let it get cool and refrigerate it

After 2-3 hours serve in mud kuhlad. Sprinkle sieve almond and serve.
