Cook squash, tomatoes, garlic, onion, stock cube, salt, olive oil with half a cup of water until the squash is soft.

Add parsley and nutmeg for the last 2 minutes of cooking.

Mix with a stick mixer.

Sprinkle with grated parmesan when serving.
