Grilled Kofta Kebab on Skewers (Kofta El Haty)

In a food processor, blend the finely chopped small onion with the soaked and well-drained bulgur.

Add the parsley and garlic, and blend together well in the food processor.

In a large bowl, combine the ground lamb and lamb fat. Add the meat spices, salt, black pepper, cinnamon, nutmeg, and paprika. Mix well.

Take a small egg-sized piece of the meat mixture and add it to the mixture in the food processor. Blend well.

Add the blended mixture from the food processor back to the rest of the meat mixture. Mix thoroughly, cover, and refrigerate the kofta for 1 hour.

Shape the kofta onto wooden skewers that have been soaked in water for 1 hour.

Brush a grill or grill pan with 1 tablespoon of oil. Arrange the kofta skewers on the grill and turn them on all sides until browned and cooked through. Serve with tahini sauce. Enjoy!
