In a large pot heat olive oil......

Sauté ground turkey in olive oil until browned, then add onion, green pepper and garlic, sauté for several more minutes........

Next add : cream of mushroom soup, milk and minute rice, mix all well........

Now on low heat add your fresh baby spinach, salt, black pepper and stir well.......

Pour mixture into a baking pan that has been coated with olive oil cooking spray......

Place shredded Parmesan cheese all over casserole.......

Cover and bake in a preheated 350 degree oven for 40 minutes......

Uncover and bake for another 10 minutes or until cheese is slightly browned on top.......

I like the quinoa for its added nutritional values over rice and I like the way it soaks up flavors. I gave you two ways to prepare this.
