Soak tamarind

Peel of skin from bitter gourd. Slice bitter gourd and onion

Take the pan and keep it on the stove, pour oil, once the oil heats add mustard and cumin seeds, once it crackle add curry leaves, red chilli, onion, again add salt and turmeric, and then add ginger garlic paste, roast it In a low flame, add bitter gourd, close it with a lid and keep the stove in low flame for a few minutes, mix in between, open the lid and add chilli powder, coriander powder, cumin powder. Once it cooked properly add tamarind pulp, close it with a lid and boil for few minutes.

Again open the lid add jaggery and heat in low flame until the water evaporates. Once the Curry cooked transfer into a bowl and serve hot with rice /chapati / roti.
