Cucumber Spinach Pancakes
Steps

Grate cucumber and add little salt on it
Leave it in a bowl for ten minutes.
Adding salt will help cucumber in leaving it's water. - 2
Squeeze the cucumber nicely and add with other ingredients to make pancakes.

Take all the ingredients except oil in a bowl and make a batter by adding curd and little water to it.

Let the batter rest for some time so that rice flour can absorb the water and swell.
The batter shouldn’t be runny nor it should be very thick - 5
Heat a non-stick pan/ tawa
When it’s hot enough pour two laddles of the mixture on spread like a pancake - 6
Apply little oil on the sides(around it)
When you see the sides have become brown slightly, turn it and let it cook on the other side too. - 7
When pancake is done remove it from the pan and serve hot & crispy pancake with ketchup or any chutney.

Note:- The Water squeezed from cucumber can be used in vegetable juice or making raita too.
