Old fashioned chocolate fudge

We LOVE fudge but what’s not to love about it? This is the kind of fudge you hafta babysit the entire time but well worth the effort! Super creamy. Make sure you use a big enough pan because it grows. I use my candy thermometer because I pull it off the heat the second it hits the soft ball stage. Too soon, it’s grainy. Too late, it’s dry. It’s a fickle candy, but when it’s right it’s heavenly. #mycookbook

Ingredients

  1. 1 lbmarshmallow fluff
  2. 1 stickbutter or margarine
  3. 1 (12 oz)can evaporated milk
  4. 5 cupssugar
  5. 1 tspsalt
  6. 4 cupschocolate chips
  7. Good splash vanilla

Steps

  1. 1

    In a large pot, on med/low heat, combine first 5 ingredients. Stir until completely combined. Attach your thermometer to the side of the pot but don’t let it touch the bottom.

    Raise the heat to medium and stir constantly. You’ll be stirring for awhile lol continue stirring until the thermometer reads soft ball stage. As soon as it reaches soft ball stage pull the pan off the heat.

    Stir in the chocolate chips and vanilla. Stir til totally combined and pour into a greased 9x13 Pyrex dish. Allow to cool before cutting.

I'm an army brat with a Cajun mother and an Irish dad. I'm married to the love of my life, David, and we have 2 daughters and 2 grandchildren. I've been a barber for 40 years. Im an old fashioned, old school cook and my recipes are basic. I change them up all the time.Since finding out I’m diabetic I’ve had to rearrange old habits. Any recipe I have can be made the old fashioned way OR replaced with lower carb options. Just ask and I’ll tell you what has worked for me.I’m the self proclaimed queen of the leftover. I have issues with leftovers looking back at me with the same sappy look they had the day before. Can’t do it. My super power is turning what I find in my fridge into something I want to eat. I work so much better under pressure. I live for shortcuts and not having to run to the grocery every day. Work with what you have. Adapt and overcome. Also, the less dishes, bowls, and pots I hafta use, the better. Hope some of these recipes work out for ya!
