Mix the milk and baking soda together and set aside.

In a pot, combine the butter, golden syrup, molasses, and dark brown sugar. Cook over medium-low heat until the sugar dissolves (do not boil).

In a large bowl, mix the flour, ginger, cinnamon, and nutmeg.

Pour the syrup mixture from step 2 into the flour mixture and stir until combined. Then add the milk and egg, and mix well.

Pour the batter into a cake pan lined with parchment paper. Bake in a preheated oven at 340°F (170°C) for about an hour or until the cake is fully cooked.

I used an 8 x 3.5 inch cake pan.
*You can use any size cake pan, but baking times may vary.
