I have prepared many dishes using leftover pav bhaji and they impressed my guests more than the usual way of serving it.
This time I stuffed it inside the bell peppers, along with crumbled cottage cheese. A quick baking and it's done! And of course no pav bhaji platter is complete without some butter onion and a dash of lime!

Preheat the oven at 200 degree Celsius.

Halve the bell peppers, you can choose whichever colour you want. Discard the seeds. Brush soft butter inside the halves and bake for 5 minutes.

Mix crumbled paneer in the bhaji.

Fill baked capsicum with the bhaji and bake for 15 minutes. By now cottege cheese will start browning.

Put some chopped onion and coriander leaves along with some butter and little lemon juice. Sprinkle little pav bhaji masala and serve with buttered and toasted pav/french bread.

I had some home baked loaf that i sliced and toasted crisp in butter.
