Okonomi latkes

Okonomiyaki is a Japanese savory pancake. Latkes are a potato pancake typically cooked on Hanukkah. This recipe combines the two.
I saw that a famous restaurant in NY made these. I haven’t been there but I liked the idea!

Cooking Instructions

Wash and peel potatoes. Grate potatoes and onion. I used a benriner but you can also use a grater or cusinart with a grating disc.

Place potato and onion in a thin towel and wring out all the water into a bowl.

Allow the water to settle and pour off the water on top, leaving a few tablespoons of starch.

Toss ingredients of “A” in the starch using your hands. Set aside for 10 minutes.

Heat oil in a skillet over medium high heat. The oil is ready when a drop of batter sizzles immediately.

Add batter to oil using a fork. Make sure the latkes do not touch each other. Flatten them a little if they are lumpy in the middle.

Fry until crispy, about 4 minutes for each side. Place on a paper towel to drain when done.
- 8
Top with “B” ingredients. Eat while hot!

I bought a small spaghetti squash the other day because I REALLY wanted spaghetti squash. However, because my hubby doesn't like it with just butter salt & pepper like I do (and has barely liked any other way I've prepared it) I wanted to throw something new and unexpected his way. He loves when I make Latkes so I simply took my go-to Latke recipe, replaced the potato with spaghetti squash, and modified other ingredients accordingly. He actually enjoyed it!I have included as the first few steps my personal favorite cooking method for spaghetti squash; roasting. This keeps the excess water content down. However, you can prep the squash whatever way you choose. You just might need to squeeze out excess moisture or add additional flour (that one would throw off the flavors), especially if you boil it. I modified a recipe that was included in a JCCRI (a Rhode Island Jewish school) newsletter. Their version used a lot of oil to make a deep-fried styled of latke and used a lot of obscure Kosher seasonings that I omitted. I then reduced the amount of flour and added some grated potato.My daughter once attended an Israeli Jewish school for about a year. I had been asking myself this question: is Japan's Okonomiyaki a pizza? I mean, does a pan-fried batter counted as a dough? It definitely has sauce and toppings. But can Kewpie mayo qualifies as a cheese? Pizza is dough, sauce and cheese right? So technically, this is a pizza, right? Lol! I watched too much "Is it really dough" on YouTube.I love this "Japanese pizza". I hardly find any great okonomiyaki in Singapore tho, sadly. There are actually 2 types of okonomiyaki; the Osaka's and the Hiroshima's version. The one which I am making today is the Osaka's version. Hiroshima's version is a lot "heavier" as it contains added noodles and lots of vegetables and other toppings. Perhaps I will try to make that version in the future. It is really difficult to decide which is my favorite; each version has it's own uniqueness.This is rather a simple and easy dish to make, tho, flipping the okonomiyaki really do takes some practice, especially when I am making 8 inch big okonomiyaki. But it all comes together in the end. Cos after all, mesmerizing over how the bonito flakes dance is the price. Don't you agree? Anyway, I was so glad the other day when I spotted chicken bacon in my local supermarket. Chicken bacon does exist! I do not consume pork, so this is intriguing for me. You can however, use a high quality pork bacon. In closing, is this a pizza? I will leave it to you to decide and I really do hope you give this recipe a try. Daniel Lim -
