Steps

Wash and Chop all vegetables.

Cut veggies in smaller pieces.

Grate ginger and make puree of tomato by grating it. Wash and Chop coriander leaves.

Heat oil in a karahi and put cumin seeds and when cumin seeds splutter put ginger and tomato paste and sauté for 2 minutes. Add, salt, red chilli powder and turmeric powder. Sauté for 2 minutes.

Add vegetables and mix well. Put 2 tbsp water and cover the lid. Cook it on low flame for 10 minutes.

Add garam masala and mix well. Switch off the flame. Serve hot with chapati garnished with chopped coriander leaves.
