Wash and grate carrots and keep aside.

Soak rice in water for 20 minutes.Microwave carrots for 3 minutes.Dissolve jaggery in little water.Boil rice and keep aside.

Heat a pan, add ghee. Add melon seeds, melon seeds, grated coconut, nuts, cloves and sauté for one minute.

Add grated carrots,sauté for one minute. Add cardamom powder.

Add dissolved jaggery. Add boiled rice. Keep some portion of boiled rice aside.

Mix well the rice very lightly with fork. Cover the pan for five minutes on the simmer flame. Now add different colours to kept rice with fork.

Open the lid and add coloured rice. Add some more chopped dry fruits. Serve hot by garnishing with nuts and raisins.
