Thick & Creamy Broccoli & Stilton Soup

Steps

Bring a large saucepan of salted water to the boil and add the broccoli florets/stalks and cover with a lid and boil until tender and a knife passes through the stalks easily. Drain off the water completely.

Heat a large pan over a medium heat. Add in the oil. Once the oil is warm add in the onion & leek.

Fry for a few minutes until buttery soft. Season with white pepper & a generous grating of nutmeg. Give everything a good stir up.

Transfer the cooked broccoli to the pan. Add the butter. Once melted stir through the vegetable to coat. Pour in the milk and bring to a simmer. Simmer for around 6 mins to allow the flavours to come together. Crumble in the blue cheese and stir again. Simmer for another 2 minutes.
Remove from the heat and allow to cool for a couple of mins. Add in the cream cheese and stir through until melted.

Using a hand held blender, blend the soup until no lumps remain and it's beautifully smooth & thick in texture. To loosen up the consistency to your liking add an extra splosh of milk and stir through.
Serve up whilst warm and crumble over a little more cheese as a garnish (if you'the like), and add some cracked black pepper & salt to taste. Crispy bacon bits also work great on top too instead of salt! Enjoy. :)
