One of my husband's favorite dishes, so I like to change up the filling. Great for this time of year.

In a bowl, combine the corn flour and salt. Gradually add the warm water and knead until a dough forms. If needed, add more water. Once the dough is ready, gently mix in the oil until incorporated.

Take a portion of dough and shape it into a small bowl in your hand. Fill with plenty of quesillo, then close the sides and shape into an oval tlacoyo.

Alternatively, take a smaller portion of dough and roll it into a cylinder, elongating the ends. Place it in a tortilla press and flatten. Add quesillo in the center, make another piece the same way to cover it, and press the edges with your fingers to seal.

Cook the tlacoyos on a griddle or skillet over low heat, turning to cook both sides evenly.

Serve topped with mashed refried beans and your favorite salsa. We love using habanero salsas. Hope you enjoy!
