Heat up a pan and dry roast oats in that fir 3-4 minutes. Keep stirring to avoid burning
Take it out in a plate - 2
Now in the same pan heat 1 tbsp oil and splutter 1 tsp mustard, a few curry leaves and saute cashews too till they are slightly brown.

Now add ginger, green chilli and chopped onion.
Sauté them well.
mix until the oats absorb all the water. - 4
Add chopped carrot, and capsicum, peas. Sauté and add salt & pepper. Cover and let the vegetables cook slightly. Don’t over cook And add 1 cup water and let it boil.

Once the water comes to a boil, add in roasted oats and mix well.

Now cover and simmer for 5 minutes or until oats gets cooked well.
Add chopped Coriander leaves and serve hot.
