I love this fish, whether it's saganaki, fried with skordalia, or savoro... It's a clean (open sea) and easy fish, ideal for feeding even children because it doesn't have bones, just cartilage, and the flesh is easy to remove even with a spoon.

Ingredients

2 servings
  • 2 piecesskate (skinless)
  • 2 tablespoonsolive oil
  • 1 tablespoonmustard
  • 1hot pepper, finely chopped (optional)
  • 1/2 teaspoonchili flakes (optional)
  • 2-3 tablespoonslemon juice
  • salt and pepper to taste
  • oregano

Steps

    Wash, cut into pieces, season with salt and pepper, and lightly flour the skate. The salt and pepper will add flavor (it won't dissolve in the water), and the flour will help thicken the sauce during cooking. Place in a pan over high heat with water (about 1-1 1/4 inches), oil, lemon juice, mustard, hot pepper, salt, and pepper. Stir and bring to a boil.

    Once boiling, reduce the heat slightly and add the fish. Cook for about 8-10 minutes. Shake the pan to prevent the fish from sticking and try not to disturb them too much to avoid breaking them apart. Turn them with a spatula to cook on the other side for another 5 minutes.

    Check the sauce; if it's thick, add a little more water. If it's thin, dissolve cornstarch in a little water and add it to the pan. Now you can add the oregano (not earlier, as it will become bitter). Taste and add more lemon if desired, and continue to cook for another 3 minutes. Enjoy!
