Easy & Delicious Baingan Bharta Recipe// Roasted Eggplant

Take a Bharta Baigan/ Brinjal. Choose it wisely and take a soft baingan / brinjal without any holes in it. Grease it well with oil.

Now place a rack over the flame and cook the baigan/brinjal on all sides equally. Let the outer skin burn properly and turn it in equal intervals to avoid it from excess burning.

Let it cool for a while and remove the skin of the baigan/brinjal and with the help of fork mash it properly.

Now in a pan add mustard oil (you can take any variety as per your choice) and then add jeera and mustard seeds, when it is heated properly. Mix it for a while.

Now add ginger garlic paste and green chillies and mix well. Then add onions to it.

Add salt to the onion. It helps in faster cooking of onion. And mix well. Also, add a pinch of hing.

Now add coriander powder, red chilli powder, turmeric powder and garam masala to it. Mix well and then add desi tomatoes to it. Desi tomatoes give a sour taste to it.

Now cover and cook the tomatoes for about 4-5 minutes. It may take more time in some cases.

When the tomatoes are cooked properly add your mashed baigan to it and mix well.

Cover and cook for about 4 to 5 minutes again so as to cook it properly. Then garnish with coriander leaves.

Here the Baigan Bharta is ready to be enjoyed...!!!
